CSF Brussels And Bacon Fried Rice

Ingredients

  • 1 Large Egg
  • 120 grams Egg Whites 100% whites, carton and any brand
  • 100 grams Cooked White Rice Jasmine rice or your favorite long grain. Day old rice is best
  • 2 Slices Uncured Bacon Natural Choice by Hormel brand or your favorite
  • 5 grams Garlic Paste Gourmet Garden brand, refrigerated and found in the produce section of most major grocery stores. You can sub one minced garlic clove if you prefer
  • 50 grams Cooked Brussels Sprouts Pan cooked with oil spray, s&p, and garlic powder
  • 30 grams Scallions white and green parts, chopped.
  • 15 ml Light Soy Sauce Any brand or sub Coconut Aminos if you prefer
  • Everything But the Bagel Seasoning to taste, optional

Instructions

  • NOTES: This recipe uses leftover steamed rice and pan cooked Brussels sprouts. You can cook the sprouts fresh but the rice is best if it is leftover (1 day or more is preferred for fried rice)
  • Place a cooking pan onto the stove and set temperature to Medium Heat.
  • Cut raw bacon into bite sized pieces and place them into the pan.
  • Allow the bacon to crisp up and render its fat (2 minutes or so)
  • Add the cooked, leftover rice to the pan of bacon and mix to break up the cold rice and coat with the bacon fat.
  • Add the garlic paste to the rice and mix well.
  • Lower the temperature to Medium Low heat and add the cooked Brussels sprouts. Cook while stirring to warm the sprouts (one minute or so)
    (If you are cooking the Brussels fresh, remove the bacon and rice mixture from the pan and set aside. Cut the ends of the sprouts and cut into quarters. Spray the pan with avocado oil and set temperature to Medium High heat. Cook the brussels until they are tender and charred. Season them with salt & pepper as well as garlic powder towards the end of cooking so as to not burn the garlic powder)
  • Push the rice, bacon and Brussels mixture to the edges of the pan.
  • Add the egg and egg whites to a cup or bowl and whisk to mix. Pour the eggs into the center of the pan and stir with a spatula until the eggs have set. Mix the scrambled eggs into the rice mixture.
  • Add the soy sauce and chopped white parts of the scallions to the fried rice. Stir to combine.
  • Remove the fried rice from the pan and plate. Sprinkle with the green parts of the scallions and add Everything but the bagel seasoning if you'd like. ENJOY!
