- 1 Whole Flatbread Joseph's brand (Flax oat bran & whole wheat lavash bread - 2 servings = 1 whole piece) Can be found at Walmart in the bread aisle and some grocery stores in the bakery section.
- 100 grams Frozen Fire Roasted Corn Kernels Trader Joe's brand or your favorite. Most major grocery stores now carry roasted corn in the freezer section
- 50 grams Fat Free Mozzarella Shredded Cheese Kraft Brand or your favorite
- 28 grams Feta Cheese Crumbles President brand or your favorite
- 30 grams Light Mayonnaise Any brand
- 1/4 tsp Chili Chipotle Powder more or less to taste. You can also sub with canned adobo sauce
- Fresh Cilantro leaves Handful, chopped
- Tajin Seasoning To taste, optional
Preheat oven to 400 degrees.
Place the whole flatbread onto a cookie sheet and place it into the oven to cook for 3 minutes.
Remove the flatbread from the oven but keep it on the cookie sheet.
Add the frozen corn to a microwave safe bowl and heat on High for one minute (stopping at 30 seconds to stir) or until thawed.
Mix the mayonnaise and chipotle powder together in a small cup or bowl.
Spread the mayonnaise onto the warm flatbread.
Sprinkle the mozzarella cheese over the entire flatbread evenly.
Next, add the corn to the flatbread followed by the crumbled feta cheese.
Place the flatbread back into the oven to cook for 3 to 4 minutes or until cheese has melted and the edges are brown.
Remove the flatbread from the oven and sprinkle cilantro and tajin on top. I also added a green hot sauce on top as I like it spicy but that is optional. Slice and ENJOY!
