CSF Pumpkin French Toast

Ingredients

  • 3 Slices Dave's Killer Bread, Thin Sliced Any 70 calorie variety
  • 2 Large Eggs
  • 20 ml Fair Life 2% Milk
  • 1/2 tsp Pumpkin Pie Spice sub with 1/4 tsp Nutmeg and 1/4 tsp Ground Cloves if you prefer
  • 1/2 tsp Ground Cinnamon
  • 60 grams Canned Pumpkin Puree 100% pumpkin. Libby's brand or your favorite
  • 5 grams Raw Pepitas Pumpkin Seeds. Sub crushed walnuts if you prefer

Instructions

  • Lightly spray a non-stick cooking pan with avocado oil (or oil of your choice) and set stove temperature to Medium Low heat.
  • Crack the eggs into a shallow bowl or dish then add spices and milk to the eggs.
  • Whisk egg mixture together then add the pumpkin puree. Whisk to fully incorporate the pumpkin into the eggs.
  • Add a slice of bread to the egg mixture to absorb some of the liquid. Flip the bread to coat the other side then place the bread onto the heated pan.
  • Follow the same method with the other two slices of bread.
  • If you have some additional egg mixture left in your bowl, pour it into the pan to cook alongside the french toast. You can eat it tucked into the slices of toast.
  • Cook the bread slices on each side for 2-3 minutes or until golden brown.
  • Plate the french toast and sprinkle the raw pumpkin seeds on top. Add a sprinkle of powdered sugar and some pure maple syrup (as seen in the recipe photo) or use your favorite low calorie or sugar free syrup. Be sure to log any syrups and additional toppings separately. ENJOY!
  • NOTES: This recipe does NOT include the pure maple syrup or powdered sugar to allow you to choose your own sweeteners and syrups. Add a side of turkey sausage or turkey bacon along with some scrambled egg whites for additional protein.
