- 4 oz Cremini Mushrooms one small container. *Substitute with any type of mushroom you like
- 100 g Snow Peas halved
- 9 g Minced Garlic (approx 3 cloves)
- 50 g Carrots (cut into matchsticks or you can purchase bagged carrot matchsticks)
- 100 g Zucchini (cut into bite sized pieces)
- 45 ml Coconut Aminos (we used Coconut Secret Brand)
- 50 ml Lite Soy Sauce
- 224 g Whole Wheat Pasta (4 Servings)
- 15 ml Pure Sesame Oil
- Pink Himalayan Salt (Optional)
- Scallions (Green Onions) (Optional)
Boil pasta as instructed on the package, drain and set aside but keep 1/2 cup of the pasta water for later useWhile pasta is cooking, heat a large skillet or frying pan on medium. Pour in sesame oil and add all vegetables as well as garlic. Cook to soften for a few minutesAdd salt to vegetables if desiredOnce vegetables are tender, pour pasta into the skillet and mix to combinePour coconut aminos and soy sauce and stir. Let noodles simmer until sauce begins to thicken. If you like a thinner sauce, add reserved pasta water to the pan until desired sauce is achieved. Serve immediately or serve cold which is great, too! We like to serve ours alongside grilled salmon or chicken.
